Our son Ervin's favorite cookie which is known as St. Nicholas cookies in our family. In Europe they are sometimes known as pepernoten. These spicy cookies are crispy on the outside and tender on the inside. They are flourless, refined sugar freeze, gluten-free, vegan and soy-free.
